Limoncello cream truffles

Hi everyone, i hope you enjoyed my last post. Today's post is a recipe of how to make limoncello cream truffles, trust me they are wonderful.

This recipe is from the sweets made simple book from BBC 

Ingredients
100g white chocolate
2 tbsp double cream
zest of half a lemon
2 tbsp limoncello
a pinch of salt
50g un-salted butter (chopped)
white chocolate for coating

Method
Melt the chocolate and cream together over a pan of hot water.
Take the bowl off the heat and add in the lemon zest, limoncello, salt and butter, then whisky until it resembles lemon curd.
Decant into a container with a lid and leave to chill over night.
Scoop up small teaspoon sized balls of the mix and place onto a baking sheet and freeze overnight.
melt extra white chocolate and dip the truffle balls until fully coated, then chill until set.

These truffles take around 2 days to make, but trust me they are delicious.
