The ingredients:
125g butter
55g caster sugar
180g plain flour
Zest of one large lemon
Method:
Preheat the over to gas 5,
Beat the butter and sugar together until smooth,
Stir in the flour, then roll out and cut into fingers or rounds,
Place on a baking tray, sprinkle with caster sugar and chill in the fridge for approx 20mins,
Bake in the oven for 15-20 mins, then cool on a wire rack.
