This recipe makes 12 muffins
Ingredients
2 large eggs
85g caster sugar
225ml milk
100g butter (melted and cooled slightly)
1 tsp vanilla extract
grated zest of 1 lemon
280g self-raising flour
1tsp baking powder
225g blueberries
Method
Preheat the oven to gas 6 200c and line the muffin tins with paper cases. Place the eggs in a large bowl. Add the sugar, milk, butter, vanilla extract and lemon zest and stir to combine. Sift in the flour and baking powder into the bowl. Fold the ingredients together very roughly (the mix should look quite lumpy), add the blueberries and stir. Divide into the muffin cases and bake for 25-30 mins until the top splits.
*I used lemons from Waitroes and they made them a bit too lemony, next time if i use these lemons i will reduce the quantity of lemon zest.
